Fermentation was an essential process in the diet and cultural practices of the Cerere people, who lived primarily in the Senegal River Valley. The millet grain was soaked in water and left to ferment for several days, during which time it would transform into a sour and slightly alcoholic beverage. This drink, known as "tchoukoumou," was an essential part of the Cerere diet and was consumed regularly for its nutritional value and medicinal properties.
