EDITORS COMMENTS
This evocative image captures the chaotic and humorous scene of a kitchen at Princes Restaurant in Singapore during the 1930s. The front cover of the menu card showcases a busy scene of a chef and his young assistant in the midst of food preparation. The kitchen is far from hygienic or organized, with debris and bones scattered about, an umbrella leaning against the wall, and a pipe belching out smoke. The chef, with a serious expression, wields a large knife, while his assistant, with a mischievous grin, holds a vegetable in hand. The shelves behind them are cluttered with various cooking utensils and ingredients. The atmosphere is one of comic chaos, yet the focus remains on the delicious food being prepared for eager customers. The untidy and unhygienic conditions may raise eyebrows by today's standards, but this image offers a fascinating glimpse into the past and the daily life of a bustling Singaporean restaurant in the early 20th century.
