Unripe cashew nuts

Unripe cashew nut. Image 1 of 2. Native to South America, the cashew (Anacardium occidentale) is now widely cultivated throughout the tropics. Cashew trees produce a fruit, known as an apple (centre), and a nut (lower centre). The nut forms before the fruit swells and ripens, which takes two months. Once harvested, the fruit is often discarded in favour of the nut, although it can be used to make jellies, jams and juice. The nut must be removed from its shell with care, as the shell contains an allergen that can cause dermatitis. Cashew nuts are used in a variety of sweet and savoury recipes. Photographed in Grenada. See B790/238 for a ripe cashew nut

EDITORS COMMENTS
This print showcases unripe cashew nuts, highlighting their unique structure and natural beauty. Native to South America, the cashew tree (Anacardium occidentale) is now widely cultivated in tropical regions across the globe. The image captures a single unripe nut at the lower center of the frame, surrounded by its fruit known as an apple at the center. The photograph reveals that the nut forms before the fruit swells and ripens, which typically takes around two months. Interestingly, once harvested, the fruit is often discarded in favor of extracting and utilizing the valuable nut within. However, it can also be transformed into delicious jellies, jams, and juice. It's important to handle cashew nuts with care during processing as their shells contain an allergen that can cause dermatitis. Despite this cautionary note, cashews are extensively used in both sweet and savory recipes due to their rich flavor profile. Taken in Grenada – a Caribbean island renowned for its agricultural produce – this image provides insight into one stage of cashew production. It offers a glimpse into nature's reproductive process while showcasing Grenada's contribution to global food production.
