EDITORS COMMENTS
1. Title: A Unique Culinary Tradition: The Quarterdog of Pilrhoth, Carmarthenshire - A Wheel Worked by a Dog for Turning a Roasting Spit 2.. This photograph showcases an intriguing piece of Welsh culinary history - a wheel worked by a dog to turn a roasting spit. The image, taken circa 1905, depicts the mechanical mechanism in action at Pilrhoth, Llanstephan, in Carmarthenshire, Wales. 3. Background: The quarterdog, as it was known, was a common sight in Welsh households until the end of the first quarter of the 19th century. This unusual system, which relied on the power of a dog to turn a spit, was an essential part of the cooking process for roasting meats. 4. Description: In the photograph, a well-muscled dog is seen standing next to a large wooden wheel. A roasting spit, laden with meat, is attached to the wheel's axle. The dog's collar is connected to the wheel via a pulley system, enabling the animal to turn the spit with a simple tug on a tether. 5. Provenance: This particular quarterdog was the property of the late Sir John Williams, Bart. The wheel was once a fixture in the Pilrhoth Hall, which served as both a kitchen and dining room. When the house was demolished, the wheel was carefully removed and preserved. 6. Technique: The dog's energy was harnessed to turn the spit, providing a consistent and even roast. The dog would be encouraged to walk in a circle, causing the wheel to rotate and the spit to turn. This method of cooking was labor-intensive but ensured that the meat was cooked evenly and thoroughly. 7. Legacy: The quarterdog is a testament to the ingenuity and resourcefulness of the Welsh people. This unique culinary tradition reflects the strong connection between the community and their land, as well as their ability to adapt to their environment. Today, the quarterdog stands as a fascinating reminder of a bygone era in Welsh history.
