This stunning hand-colored copperplate stipple engraving depicts Blood Amaranth, Amaranthus cruentus, also known as Mexican Grain Amaranth or the Shining Amaranth. The illustration is taken from Antoine Laurent de Jussieu's Dizionario delle Scienze Naturali, or Dictionary of Natural Sciences, published in Florence, Italy, in 1837. The engraving was expertly executed by Massard, under the direction of the renowned French botanical illustrator Pierre Jean-Francois Turpin (1775-1840). Blood Amaranth is a striking plant, characterized by its vibrant, red-purple leaves and tall, branched inflorescences. The plant is native to Central America and was an essential food source for the Aztecs and other ancient civilizations in the region. The edible seeds, which are rich in protein and essential amino acids, have been used for centuries in various culinary applications, including making a nutritious porridge or flour.
