Jerusalum artichokes
Jerusalum artichokes (Helianthus tuberosus) on a table. One has been partially peeled, although the vegetable is usually cooked in its skin. These are the edible tubers from the roots of the Jerusalum artichoke plant, which is a member of the sunflower family. This artichoke's common name is a corruption of the Italian for sunflower (girasole). The Jerusalum artichoke is highly nutritious, containing vitamin C, iron, calcium and potassium but no fat, cholesterol or sodium (salt)
